During this Karthäuserhof Experience, we traveled to Asturias to meet Chef Chus Manzano at Casa Marcial – a three-Michelin-starred restaurant in the mountains that is nevertheless deeply connected to the nearby sea. In our conversation, Chus explained how every dish at Casa Marcial reflects the essence of Asturias: a dialogue between sea, land, and tradition. Her philosophy begins within and moves outward – balancing softness with acidity, vegetables with fish, and fire with freshness.
